Ma le abitudini agricole e la pastorizia sono molto cambiate negli ultimi settant’anni e anche i prodotti utilizzati nei campi di coltura, dove si usano sempre più diserbanti che nuocciono al nostro sistema immunitario e in generale alla nostra salute, perciò nel libro si raccomanda vivamente di utilizzare prodotti provenienti da aziende agricole biologiche certificate. Ogni ricetta è accompagnata dalla descrizione dei prodotti utilizzati, dove sono enumerate le proprietà nutrizionali e terapeutiche dei singoli alimenti.

500 traditional Mediterranean recipes prepared with organic products. In 2010 the Mediterranean Diet was recognised by UNESCO as Intangible Cultural Heritage of Humanity. A nutritional model that involves the consumption of foods largely of plant origin such as vegetables, legumes, fresh and dried fruit, and cereals, especially whole grain, olive oil as a source of prevalent fat, and a moderate and not daily consumption of white meats, fish, dairy products and eggs. This book contains 500 best recipes from the seven different countries overlooking the Mare Nostrum. But agricultural habits and pastoralism have changed a lot in the last seventy years and also the products used in the cultivation fields, where more and more herbicides are used that harm our immune system and in general our health, so it is strongly recommended in the book to use products from certified organic farms. Each recipe is accompanied by a description of the products used, where the nutritional and therapeutic properties of the individual foods are listed.
